Strawberry Spinach Salad



Summer is almost here! Although it may not actually be summer yet the strawberries didn’t seem to mind growing in abundance. In California strawberries are plentiful and inexpensive right now. Below is one of my favorite recipes and always a crowd pleaser for Strawberry Spinach Salad.

Ingredients
1/2 cup olive oil
1/4 cup balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
2 Tablespoons fresh lemon juice
1/2 teaspoon warmed honey or organic sugar
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
1/4 cup almonds, blanched and slivered
8 ounces crumbled feta cheese (optional)

Directions
1. In a medium bowl, whisk together the olive oil, vinegar, honey, salt, pepper and lemon juice.
2. In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss.
